Ingredients

    1 1/2 cups mashed banana
    1/3 cup brown sugar, unpacked
    2 eggs
    1/2 tsp salt
    1/2 tsp. vanilla extract
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    2 cups SILK Light Soy Milk, Original (or milk of choice)
    2 1/2 cups old-fashioned oats
    1/4 tsp. cinnamon
    1/8 tsp nutmeg
    1/3 cup chopped walnuts, optional

Tips

The addition of walnuts will add 33 calories, 3.4g total fat (0.3g saturated), 23mg potassium, 0.3g dietary fiber, and 0.8g protein.

Note that substitution of milk will affect nutritional stats.


Directions

STEP 1: Begin preheating the oven to 350 degrees. Mash the bananas well with a fork. Measure the bananas to make sure you have about 1.5 cups.

STEP 2: Whisk the mashed bananas together with the brown sugar, eggs, salt, vanilla, baking powder, baking soda, and salt. Next whisk in the milk, then stir in the oats. Roughly chop the walnuts and stir them in as well.

STEP 3: Spray the inside of a glass baking dish (11x7 inch or similar size) with non-stick spray. Pour in the oat mixture. Cover with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for another 15-20 minutes or until the center is solid and the edges are slightly golden brown.

STEP 4: Serve warm or refrigerate and enjoy cold!

Serving Size: Makes 8 servings.

    Have made this numerous times now. The changes I have made are to switch walnuts with almonds, the bourbon with rum, and soy milk with skim milk. This has been a big hit and so filling! We have it with a bit of soy milk in the morning and it keeps me going until noon. - 9/16/19
