Number of Servings: 8

Ingredients

    1 Tbsp Olive Oil
    1 cup chopped onion
    2 cloves of garlic, minced
    3 cups fat-free, less-sodium chicken broth
    1 bunch of Broccoli (using florets only)
    (can substitute 1 (16oz) bag florets)
    2 1/2 cups 1% reduced fat milk
    1/3 cup all-purpose flour
    1/4 tsp black pepper
    8 oz. light processed cheese cubed (Velveeta light)

Directions

Heat a large nonstick saucepan with 1 Tbsp olive oil over med-high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over med-high heat. Reduce heat to med; cook 10 min.

Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from heat; add cheese, stirring until cheese melts.

Place one-third of the soup in a blender or food processor, and process until smooth. Return pureed soup mixture to pan.

Makes 8, 1cup servings

    I made this soup when I could not chew anything because I was tiring to stay with in my diet, and wanting something to comfort myself and it did all the above. It was delicious my husband even loved it. It is defiantly going into my cookbook and will be made again. - 8/16/11

    I use cooking spray instead of olive oil (I have the original cooking light recipe) and we love it. my handy dandy immersion blender is wonderful to help puree the chunks (and make my young boys want to eat it more!) - 2/11/11

    Excellent soup! Thanks for sharing (I love C.L. recipes!). Another reader was right, it's even great before the cheese is added. (Will make it that way next time-yum!)     This soup is wonderful! I halved it and used only 1 tsp olive oil and fat free milk. My husband and I demolished it! I think next time I will try use cornstarch and a little less Velveeta to lower the calories a bit (not that it is high in calories - unless you eat the amount I did!!!) :-) - 3/7/10
