This soup is wonderful! I halved it and used only 1 tsp olive oil and fat free milk. My husband and I demolished it! I think next time I will try use cornstarch and a little less Velveeta to lower the calories a bit (not that it is high in calories - unless you eat the amount I did!!!) :-)
Great soup! I even tried it with skim milk and no cheese to cut even more calories and it was great that way too. Whole family enjoyed it!
