Introduction

Number of Servings: 6

Ingredients

    Cauliflower, raw, 1 head, large broken into medium pieces.
    Onions chopped, raw, 1 medium (2-1/2" dia)
    Chicken stock, home-prepared, 4 cup
    Bacon, 2 medium slices chopped
    Milk, canned, evaporated, nonfat, .50 cup
    Parsley, 5 sprigs chopped

Tips

I top my soup with chives, cracked pepper and Parmesan or blue cheese.


Directions

Cook bacon in a soup pot over medium heat.
Add onions when bacon is cooked through. Saute for 5 minutes. Add Chicken Stock, Parsley and Cauliflower and simmer uncovered for 30 minutes.

Use an immersion blender to puree the soup.

Add Milk and soup is ready to serve.

Serving Size: makes 6 1-cup servings.

    This can easily become low carb, by using cream instead of the milk, and spring (green) onions instead of regular ones.
    And adding a dash of nutmeg brings out the taste as well! YUMMM

    I used green onions instead of regular onions, almond milk instead of dairy milk and omitted the bacon. For diabetic reasons I added cinnamon. Mmmmm.... good! Thanks for this recipe, I will use it often. - 4/20/12

    Does the nutritional info take into acount th fact that you are not draining the bacon grease out? I wonder how much that affects things since 2 slices of bacon in the tracker assumes just the crispy part... - 1/28/13

    A-mazing! I didn't have evaporated milk. I was going to use a bit of 1% milk but the soup is simply amazing even without it. It is creamy enough without any butter, cheese, or milk. Thanks for this recipe - I will be making it again. - 2/9/12

    This is a GREAT recipe for cauliflower soup AND it's very versatile, as I see others have already made some changes with success. I could see myself adding some grated carrots and other veggies next time I make it. AND I also added chives on top - GREAT flavor mix!! - 5/17/12

    I used Turkey kielbasa for the bacon, to onions I added 2 ribs of celery... some. Garlic.. I used almond milk.. I chopped the cauliflower, I like it chunky..

    I do something similar; although, I don't use bacon. I also use low fat plain yogurt instead of the evap milk. I add the yogurt in the last 5 to minutes of cooking. I also add tarragon. YUM! - 1/20/15

    I'm not a cauliflower lover, and since I had most of a head left over from a previous recipe I decided to try this. Cooked it on high in my crock along with some shredded carrot and sliced celery, adding the milk and bacon bits at then end. DELISH! You've made me a cauliflower fan! - 1/27/13

    This recipe, from what I see, appears quite similar to the cauliflower mash I make (my substitute for mashed potatoes), and I'm looking forward to trying it, substituting for the bacon due to its negative effects on my Crohn's. I've been craving a nice creamy soup! - 4/20/12
