Introduction

These are crisp and golden on the outside and creamy on the inside! The cottage cheese gives these pancakes their tangy flavor and creamy texture. Serve with butter and pure maple syrup. Ingredients

    2c Cottage Cheese
    4 eggs
    1/2 c flour

Directions

Mix cottage cheese,eggs & flour in a small bowl. Let rest for an hour or overnight in the fridge.
Heat nonstick griddle
Spoon batter on griddle and fry untill bubbles on the surface of the pancale remain open. When bottom side is a nice golden brown flip till other side is the same color.
Finish pancakes on a plate with a little Sweet n Low and add sliced fruit of your choice.

    Hard to get cooked right the first second or third time. The best heat level is between medium and medium high. On my stove it was between 6 and 7. That being said they taste surprisingly delicious. I use honey instead of syrup. Sweet and savory. - 9/17/12

    I thought these were really good! Very filling. I think I'll blend it all together to make it smoother next time though. The kids didn't like;bummer. I did take the advice of others and used whole wheat flour, splenda, vanilla, and cinnamon. Nice additions! - 5/7/09

    I actually really like these. I halved the recipe and made 6 small pancakes- they were easier to flip. I topped with a mixture of nonfat plain yogurt and low sugar strawberry jam. Made a great dessert! - 11/11/08

    These are easy to make and look like real pancakes -- but that's the best I can say about them. The half-batch I made was runny, had a hard time sticking together, and had an extremely eggy taste. It tasted like an omelette with fat-free cheese. Next time, I'll make an omelette instead. - 10/14/08

    I just mixed all this up last night and cooked them this morning. How YUMMY!

    I am not a fan of cottage cheese but I had some I had to use before it went bad. I am glad I did I will be making these more often!

    Tried these this morning. I halved the recipe and ended up with seven 4" pancakes. I blended in blender and added splenda and vanilla. I added fresh blueberries to one pancake. They have a crepe texture, but very good. I refridgerated for 30 minutes and they came out fine! - 6/5/08

    Made this twice. First time followed recipe exactly and results. Second time I whipped the cottage cheese and added splenda & cinnamon. You have to be patient and WAIT for them to bubble up like regular pancakes. Its worth waiting for. I topped them with lowfat peanut butter. Enjoyed it! - 4/18/08

    I added a teaspoon of vanilla and cinnamon, and didn't refrigerate, just whipped well with the KitchenAid. As long as you're not expecting the taste of IHOP, they're wonderful! Nice and crispy on the outside, a little creamy inside. My kids loved them too! - 4/16/08

    I let sit overnight, added extra flour, vanilla, cinnamon, a little splenda, and fresh blueberries. I try to make a small first pancake because the first one usually doesn't turn out, but the rest are great! Warm strawberries on top.     I didn't have a problem using egg substitute but I don't get the good raitings. These were crisp on the outside and soft on the inside but the taste was not very good. Even with Vermont Maple syrup. - 4/10/08

    I read the reviews first and took the advice of adding cinnamon, nutmeg, vanilla, wheat flour, oats and a tbsp wheat germ . I also whipped the cheese in a food processor. They do take about 10 minutes on each side but are a great alternative. Yummy with Splenda or syrup and egg whites on the side - 4/7/08

    I have not seen a cottage cheese pancake recipe since the 1960's weight watchers program recipe. My mom used to serve them to us as children. I will be making this recipe next weekend but will probably use whole wheat flour to add a little fiber. I will make 1/2 a batch since I live alone. - 4/7/08

    I used wheat flour and added vanilla and cinnamon. Fresh nutmeg would be good too. I had difficulty with the first batch, as they cook differently, but mastered it the second try. Delicious!! I love how the curds get real creamy. I've had them twice! - 4/2/08

    Just a comment incase anyone is interested in adding FIBER to their diet. I make a Cottage Cheese pancake but use a packet of instant oatmeal instead of the flour and blend in the blender before cooking. This adds a lot of fiber and wonderful texture to the pancakes! - 4/2/08

    I used wheat flour and splenda. Pancakes didn't turn well after 1 hour of mixing the batter; the ones next day were better. Lightly greased the non-stick pan. It took forever to cook on both sides, but the result was just nice. - 4/2/08

    The 1st 2 were really soft in the center...and I never saw any bubbles to indicate they were cooking through. The 3rd one was just right but it took me 15 min of cooking time on low to make sure the inside of the pancake was cooked to the right consistency. I added NatraTaste, cinnamon, & vanilla. - 4/2/08

    I really enjoyed these, although I tweaked the recipe a bit. I halved everything, using half cottage cheese and half vanilla yogurt, and added an additional 1/4 cup of instant oats. Very good! Although, I think I'll cream the cottage cheese next time I make them. - 4/2/08

    Based on a normal pancake recipe and previous comments, I added 1/4c. of splenda. (That's 1/2T. for each pancake to add to your tracker.) I used 1/4c. measure to dump the dough, too, but not leveled, and mine made 8 pancakes. 3 min, below MEd Heat. Try freezing them &popping them in the toaster. - 3/28/08

    I liked this recipe and i found that it is rich in calcium iron and protein which is very important to the boday useful for anemic people plus provide us with energy boday need it in the morning .     That's too much cottage cheese to amount of flour.
    Try 1/2 C low fat sour cream instead. Can add the sour cream to a commercial pancake or low fat biscuit mix. It really makes good pancakes.
