Ingredients

1 package taco seasoning
4 (4 oz) boneless, skinless chicken breasts
1 cup salsa
1/4 cup reduced-fat sour cream
Directions
Put the chicken and taco seasoning in Ziploc bag; shake to coat well.
Place the chicken in a casserole dish coated with nonstick cooking spray.
Bake in 375 F oven for 30 minutes.
Top with salsa five minutes before done.
Garnish with sour cream just before serving.

You can cut WAY back on sodium on this recipe if you make your own "taco seasoning." Chili powder, onion powder, garlic powder, cumin and maybe a little thyme. Dash or pinch of salt if you wish, but the flavors of the seasonings allow you to skip salt. If you like spicy, add a little hot sauce too. - 1/29/09

I had everything except the taco seasoning, so I just googled a "recipe" to mix my own. I had all the spices. I was only making one serving, so I just put enough in the bag to make sure the chicken was coated well.
Turned out delicious! Subbed greek yogurt for the sour cream and added cheese. Yum - 6/20/11

great flavor!I have no issue with salt so it was fine for us. I weigh breast before & allow for cook off for my weight of 4 ounces (raw) . I have also made this with pounding the breast & rolling up with fresh salsa & ff cheese, then rolling in the seasons,yummy.But common sense is half of cooking! - 4/25/09

Nice idea, we liked it a lot. We turned it into more of a taco "parm" with salsa though. Sliced the chicken thinner, and made a mixture of low sodium taco seasoning mixed with Panko breadcrumbs, saute' in olive oil. Pop in oven with salsa, added low fat cheese. Never would have thought of this recip - 11/14/10

My family love love loves it! So easy and delicious! I've made Mexican Chicken twice & its destined to be forever included our families regular meal rotation. I used low sodium taco seasoning to cut down on the salt. I threw the seasoned chicken breasts in the slow cooker and added a little low sodium chicken broth while we were gone. When I got home I shredded the chicken then added the salsa and cooked until heated. We ate it on taco shells. Very good - 1/25/19

My family LOVED this. Even my picky 8 year old. I added half a cup of seasoned black beans after I poured the seasoned chicken in the pan and mixed it together. I served it over brown rice with a side of mixed vegetables. My bf said he'd like it in a tortilla. I belive this recipe would work great w - 4/24/17

Made this for dinner tonight and served it on corn tortillas layered with fat free re-fried beans, cilantro and avocado. I substituted Greek yogurt for the sour cream and I used diced tomatoes w/ green chiles in place of the salsa. I cut my chicken bite sized before baking. It was delicious! - 3/10/16
