A great casserole for a quick dinner. A great casserole for a quick dinner.
Number of Servings: 6

Ingredients

    1/2 lb ground beef or turkey
    1 cup dry rice (2 cups cooked)
    1 can pinto beans, drained (or kidney)
    1 can corn, drained
    1/2 pkg reduced-sodium taco seasoning
    1/2 cup light cheddar cheese, grated

Directions

Brown beef or turkey, drain fat.
Cook rice according to package directions.
Mix beef, rice, beans, corn, and taco seasoning into bowl, mix thoroughly.
Sprinkle cheese over top, and mix in.
Cook in oven safe dish for 20 minutes.

    I made this with a few changes/additons and my husband and I both LOVED it. (1) I used 1 whole pound of ground beef (90% lean); (2) I used black beans instead of pinto; (3) I used the entire package of taco seasoning (mild); and (4) I added 1 can of seasoned diced tomatoes. DELICIOUS!!! - 1/8/13

    I liked this but found it to be a little bland. I served it with a shredded lettuce and tomato salad and topped it with a little salsa. - 11/6/07

    This was very easy to make and satisfied my craving for Mexican food. I was out of rice so I broke up whole wheat spaghetti into little pieces and it was still good. DH suggested wrapping it tortillas next time which I think would be good too. - 4/18/07

    I will try this recipe & use some of the others' suggestions. I will sub quinoa for the rice, use some tomato paste, onions, garlic, maybe a seeded deveined jalappeno (we like spicey) & maybe a sweet bell pepper. - 10/17/10

    It seemed a little dry to I added a can of tomatoes with peppers. This made it so hot I couldn't eat it so I added a can of plain tomatoes. Everyone loved it. - 4/30/10

    It's quick, easy, and tasty - it's just not a "WOW" kind of recipe. DH and I both like it and make it occasionally - especially on a night we know is going to be busy b/c it's pretty much a no-brainer to make. Although it doesn't say in the recipe, I also baked mine at 350. - 1/26/09

    This was very good when served with baked Tostitos. I found it a little dry, though, so next time I think I'll add some salsa. Also, I will use chili beans to give a bit more flavor. - 5/13/08

    NO STARS! Sorry, but i made this for my family and they all did not like it, even me. The recipie was very hard to follow (i mean, how many oz in 1 can ? AND whaat do you preheat the oven to?) - 12/11/07

    I made this tonight for my husband who loves Mexican food. We both thought it was very good and even made extra to freeze. Only thing we noticed it that it was missing something. I may add some salt, garlic, and tomatoes next time! - 8/20/07

    I used cans of premade rice and beans - 4 of them - got them at the local co-op grocery so they were organic. Also got a can of organic corn - tasted just like fresh. Buying those cans cut way down on time to make and was a big hit with the kids we had over swimming. I also used full fat cheese. - 6/16/07

    I printed the recipe and left it laying on the counter. My son found it and made it - I came home to dinner! Only problem is that he doubled the recipe and I doubled my serving. It was delicious and healthy with brown rice, but high calorie if doubled. (350 seemed right for us too.) - 6/7/07

    This was really good. My husband even liked it! He's not ususally into my healthy recipes. The only complaint I have is that it doesn't say what temperature to bake it at. I tried 350 and it turned out really well, so I'd go with that. We'll definitely be making this again. - 3/19/07
