Ingredients

    1 1/2 C all-pupose flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    3 medium bananas, mashed
    3/4 C white sugar
    1 egg, lightly beaten
    1/3 C butter, melted

    TOPPING
    1/3 C brown sugar, packed
    2 Tbsp flour
    1/8 tsp cinnamon
    1 Tbsp butter

Directions

1. Preheat oven to 375 lightly grease 12 muffin cups or line with muffin papers
2. In large bowl, combine flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana combo into the flour combo just until moistened. Spoon batter into muffin cups.
3. In small bowl combine brown sugar, 2 tbsp flour and cinnamon. Cut 1 Tbsp butter int until it resembles coarse cornmeal. Sprinkle over muffins
4. Bake for 18-20 minutes until toothpick comes out clean

    Incredible!
    Easy to make and absolutely delicious! I used 1/2 cup whole wheat flour in place of 1/2 cup of the white flour, and unsalted butter. These are very portable too and are as good as any donut shop or bakery muffins. This recipe is a keeper. Thanks for sharing! - 7/25/11

    These are wonderful, with a great banana flavour.
    I added one more banana and did not add butter to the topping.I will make these again.

    You can substitute applesauce, yogurt, liquid butter buds, even sour cream for the butter with very good results. If you are not worried about sugar, you can even substitute pancake syrup or corn syrup for better results :) - 1/31/08

    Can you substitute something else for the butter (margarine)? Butter and margarine are so high in fat.
