Number of Servings: 48

Ingredients

    2 cups mashed overripe bananas
    1 cup nonfat milk
    3 large eggs
    1/2 cup canola or olive oil
    1 cup Splenda and 1/4 cup sugar
    or
    1 and 1/4 cup Splenda
    3 tbsp cinnamon
    5 tsp baking powder
    1 tsp salt
    1 cup soy flour
    1/8 cup oat bran
    1/8 cup wheat bran
    1 cup old-fashioned oats
    2-1/2 cups flour (white or wheat)
    2 cups COOKED 7-grain hot cereal
    2 cups raisins
    1 cup sliced almonds

Directions

Beat together bananas, milk, eggs, oil, Splenda, sugar, cinnamon, and salt.
Add remaining ingredients and mix until moistened.
Bake in muffin tins at 400 degrees for 20-25 minutes.
Makes 4 dozen. One serving equals 1 muffin.
Tips:
-Once cool, lock muffins in air-tight containers like zipper freezer bags to retain moisture.
-Try adding 1 cup chopped apples to add sweetness.

    I substitute the oil in all my baking recipes for an equal amount of applesauce. It doesn't matter what kind of applesauce you use. I have tried several...plain, cinnamon, chunky, unsweetened. No one will ever know and the end results are always moister than if made with oil! Use honey, not Splenda! - 7/22/08

    yummy,very dense and grainy,small muffin just come s to top of cupcake wrapper. I used wholewheat flour, and i used spelt flour instead of soy because i didn't have any. May rise more with white flour. - 7/22/08

    Recipe looks good. Not sure why people are saying would be healthier without this or that. Considering most muffins you'd buy are 250 calories plus, these are great. Soy is good for you. I'd agree replacing applesauce for oil. Nothing wrong with the rest though. - 7/22/08

    And how tiny are these muffins? They sound delicious, but I'm afraid if I make them in normal sized muffin tins they are just too many calories to be worth it. A one bite muffin to me is a tease- Like 1 Dorito or salted peanut. - 7/22/08

    I cut the recipe in half, and they were wonderful! I kept out half for the family dinner, and froze the rest. What a great addition to my breadfast the following day. I had 1/2 cp. cottage cheeze and a muffin, and it was a bit of heaven! A big Yum-0! - 7/22/08
