I love this recipe, I made this up to flavor up some chicken and eat it al the time since I have been dieting. It is so good! I hope you all think so too! I like this the best with the chicken cooked on the grill but you can do whatever method you like to cook the chicken. Ingredients

4 Chicken Breasts (4-5 oz. each)
4 Kraft 2% Pepperjack Singles
8 oz. Baby Bella Mushrooms, chopped
1 Tbsp. Olive Oil
1 Tbsp Light Butter
2 Tbsp Balsamic Vinegar
1 Tbsp Worcestershire Sauce
1 Tbsp Parsley, dried
1/2 Tbsp Oregano
1 tsp chicken or steak seasoning
Directions
Trim all visible fat off of chicken and pound each breast so it is about an inch thick.
Spread the olive oil, chicken/steak seasoning and parsley between all four breast and let sit for at least 15 minutes.
In a medium size pan, heat butter and oregano until butter is melted. Add all the mushrooms and top with the worcestershire sauce and balsamic vinegar. Stir. Cover and simmer until chicken is done.
Cook Chicken on grill, or whatever method you prefer.
When chicken in finished, set on plate and top with the mushrooms and then top with the cheese.
The cheese should melt but if not sometimes I put the plate in the microwave and heat for 30 seconds.
This is delicious served with some other veggie like steam green beans!

I made this for myself & 3 housemates tonight. Of the bunch, I was the only one who disliked the sauce, and it was simply because of the balsamic vinegar. I've never been a fan of Balsamic Vinegar, but my room mates will drench their frys/fish in it. Thks for posting! I'll try another Vinegar/wine! - 2/23/12
