Introduction

My family doesn't like to eat vegetables, but they beg for seconds with this recipe!!! This gives broccoli a wonderful, nutty flavor that everyone will love. Ingredients

    Broccoli, fresh, 4 cup,
    Olive Oil, .4 tsp
    Chili powder, 1 tbsp
    Garlic, 4 tsp
    Salt, 1 tsp

Directions

Mix together the olive oil, chili powder, garlic and salt in a bowl. Add the broccoli and toss to coat.

Place on a cookie sheet and roast for 20 - 30 minutes at 425 degrees. Broccoli should be browned and sizzling. It can be flipped halfway through cooking, but not necessary.

    I omitted the chili powder. I put foil on my cookie sheet and sprayed it with olive oil using my Misto, then I mixed the broccoli and minced garlic in a bowl, spread it on the foil, misted the top with olive oil and sprinkled with sea salt. When it was done I sprinkled on a little parmesan. A+! - 6/17/12

    I am not a fan of broccoli but am trying hard to eat more veggies. Thank you, thank you, thank you! I added two cloves of crushed garlic and some red pepper flakes in the place of the other spices and WOW!!! This was delicious! I will roast broccoli all winter long now! - 10/15/09

    This was excellent. I omitted the chili powder and threw in 2 thickly sliced carrots. Using Reynold's Release Wrap helps prevent sticking. It was not necessary to do anything to the vegetables while they cooked. - 11/12/08

    Wonderful!! I've made it several times now. I used the minced garlic in a jar. I threw eveything in a big plastic bowl and mixed it with my hands. - 8/26/08

    I liked it a lot. It is a lot of fat though. I wonder if you could spray the broccoli with Pam instead of using oil. I will try that next time. - 9/28/10

    most of the oil stays in the bag or cooks off. Use olive oil as thats better for you!

    Trying to cut down on salt so made it with NO salt and equal parts chili powder, garlic powder and onion powder. Even my fussy eater liked it. Trying it with green beans tomorrow! - 2/18/11

    I do lots of veggies like this. Cauliflower and asparagus are a couple more favorites. If you like lemon pepper (I use a salt free brand) it makes a nice change of spices too. Experiment to find the combo you like. - 6/10/14

    I never thought about roasting broccoli! I absolutely love it raw but I am definitely going to try this. I think I'll do it on the grill in a foil packet. I do asparagus this way and it's awesome. Thanks for sharing this! - 6/16/09

    I will NEVER have broccoli any other way...
    I started cooking it this way and can eat the whole thing for a meal.
    Try it w/ cauliflower and a little curry to season it as well

    I loved this recipe. I used only 1/2 teaspoon garlic but followed the rest of the recipe. Next time I will try to cut back on the olive oil and salt a bit but this is my new favorite way to cook broccoli which is lucky since I have a bumper crop in my garden! - 8/7/10

    I was really skeptical before trying this, but all I can say is YUM! I love the taste, texture, flavor, everything about this...I don't know if it would make any difference, but I mixed the "sauce" and put it in a gallon freezer bag a couple hours before I actually added the broccoli. - 8/16/08

    This was very, very good. The only thing I might change is the amount of time to cook it. It could be I am just a bad cook, but it seems that the broccoli really shrunk for me, but it still tasted great. - 9/28/10

    I guess I am the only one confused about the amount of olive oil.... I read .4 tsp ...that like less than half a teaspoon.... and someone complained about the amount of fat in this recipe..so I must be reading it wrong...is it 4 tsp ?

    I've made a very similar recipe before and it's so good! Shouldn't one not use olive oil above 400 degrees though? I think it turns carcinogenic above that point. I usually roast mine at 375. - 6/10/14

    I made something very similar recently w/o the heat--I used broccoli & cauliflower flowerettes, whole mushrooms, halved and whole garlic cloves--tossed them w/a little olive oil, seasoned w/a little garlic sea salt & roasted them in my barbecue for about 20 min. Got that nice nutty brown. Yum!! - 6/10/14

    I've been making this for at least 5 years, minus the chili powder, and sometimes adding a sprinkle of lemon juice and parmesan cheese, as well as fresh garlic sometimes. Always delicious. Just took mine out of the oven and about to chow down. - 5/3/14

    I don't like Broccoli and this is a way that I can eat it. It turned out crunchy (and I hate mushy broccoli worse than regular), and with a great flavor. I used about 4 cloves of garlic and it was excellent. Even my wife who doesn't like chili powder liked it. - 10/7/12

    I made this with 2 cups broccoli and 2 cups cauliflower. It was good but next time I will cut the salt down to 1/4tsp. It was way too salty with 1 tsp. - 7/8/12

    My wife is very picky or does not care much about vegetables, and mostly they to be creamy. Now I get this and go for roasted!     Nutritional info & recipe info on oil make no sense. .4 tsp oil is less than 1/2 tsp and the calories shown as 40 for oil are not possibile. As I have never roasted vegetables I will find a recipe that gives proportionate amounts for both oil and vegetables. - 6/7/19
