Ingredients

    2 skinless chicken breast
    1 can diced tomatoes with juice
    1/2 package of spinach
    salt/pepper
    onion powder to taste
    garlic powder to taste
    1 slice of bacon
    2 cups cooked rice

Directions

Mix together tomatoes and spinach.
Place chicken breast on top of mixture.
Season with onion and garlic, salt & pepper.
Lay bacon strip on top of chicken.
Cover with foil and place into 350 degree oven.
Cook until chicken is tender.
Plate rice and put one chicken breast on rice and spoon over with the tomato and spinach sauce.
Serve with a garlic roll. Enjoy!

    When I made this chicken dish, for my low-sodium diet I omitted the bacon and basted the chicken breast with fat-free, low-sodium poppyseed salad dressing, used no-salt-added diced tomatoes, and no added salt. Cooked it on 60% power in my microwave, and served on brown rice. Delicious and healthy! - 12/22/08

    To keep the chicken moist, I marinated it in fat free italian dressing and omitted the bacon. Very good. - 12/1/08

    I actually used a can of diced tomatoes that had onions and green peppers and a can of diced tomatoes with garlic and olive oil already mixed together. I did not add any garlic powder or onion powder. I thought it made the chicken taste great. I would make this again. - 5/12/09

    One of my husband's favorite! Super easy. I use canned spinach and no bacon. We add diced italian tomatos and mushrooms. SO good! The spinich comes out not bitter at all. - 11/15/09

    I keep a jar of Hormel real bacon bits just to use when I want the flavor of the bacon but not the calories. You can find it in the grocery store in the aisle with the salad dressings. - 5/9/10

    I'd make this again, but I would add some thick slices of red onion and maybe double the spinach and tomatoes. It was easy to make so I will also probably tweak it was some spices, e.g., basil, until I perfect it to my taste. - 5/10/10

    this was a great recipe and very easy...my husband and kids all enjoyed it...i used long grain and wild rice and realized that I took chicken thighs out of the freezer instead of breasts, but it worked fine...very yummy! - 12/2/08

    I seasoned the chicken (salt, pepper, low sodium soy sauce) which prevented it from being bland, and I used the entire package of frozen spinach + water chesnuts and Great Northern Beans. SO TASTY, but next time I'll cook the chicken on the stove a little before baking the dish, to reduce bake time. - 10/24/08

    This was excellent and will probably become a staple for me... I sprinkled a little parmesan cheese on the chicken and had mashed cauliflower instead of the rice. I would also serve this to company - the colors were beautiful.. compliments to the chef! - 5/23/10

    Sounds good, but will modify for just one - Using a whole pkg. of spinach, 2 chicken tenders, and brown rice. I will eliminate the bacon - can't see buying it for one slice - with the right seasoning it won't need it for flavor. - 9/17/08

    This is a great recipe. I have actually made it twice now and will make it again because both my husband and I really like it. It takes little time and I almost always have the ingredients on hand. Today I did it all on the stovetop without baking at all. Just a little quicker. - 4/27/08

    I made this tonight, it tasted awesome and was EASY to make! I wish I would have added more spinach. I used brown rice (I'm no good at making rice) and it was nice and filling. More specific measurments would have helped me ie: what size bag of spinach, and can of tomatoes. The chicken stayed moist! - 12/4/07

    Great!! Left off the bacon, doubled the spinach, I used fresh (still could use more since it cooks down so much). After reading reviews, decided to cut chicken in bites sizes after cooking.     Very good! I made this in an 8"x8" casserole dish. I used fresh onion and garlic (4-5 slices red onion/2 cloves minced garlic) and no bacon. Baked about 25 minutes, removed the foil, sprinkled crumbled feta cheese across the top and put back in the over for 3-4 minutes. Easy and good! - 4/29/12

    This was a somewhat frustrating dish. I admit, I had large chicken breast halves, but it took almost an hour to cook. I added many spices and the FF italian dressing, yet it was still bland. I especially rec. draining the tomatoes - my chicken was swimming in liquid. This didn't work out, sorry. - 4/25/11
