Introduction

Ingredients

    12.3oz box extra firm lite tofu
    3 oz nonfat plain yogurt
    1/2 cup dill pickle (chopped fine)
    2 tbsp red onion (chopped fine)
    1 tbsp yellow mustard
    Salt, Pepper and Paprika to taste

Directions

Drain excess water from tofu.
Using a hand mixer, break up tofu to desired crumbled pieces (should resemble egg).
Add the yogurt, mustard, pickle and onion mixing gently with a spoon.
Season with paprika, pepper and salt to taste.

    if you want to go totally vegan use veganaisse or nayo-naise for this recipe instead of yogurt. I also add sunflower kernels and some chopped up celery. Yum - 3/27/09

    Very good. Make sure you drain the tofu, yogurt and your pickles very well. My brand of dill pickles were a little too strong. Next time I use less. You could also use celery seed as that spice goes well with eggs. - 3/31/08

    It does have the "consitency" of egg salad but unless you NORMALLY use mustard in your egg salad -omit it. I used the spices that I would use in egg salad -old bay seasoning, curry powder, sea salt and pepper. I used the yogurt but I think I would try the FF or LF mayo if I ever make it again. - 3/27/09

    You can also substitute tofu for garbanzo beans (chick peas)! So those who are not fans of the tofu can still enjoy :) (and I use nayo-naise, too!) - 6/17/12

    Did you know that eggs contain Lutien, an essential mineral in sustaining eye health after 40??? VERY important ... 1 should not cut eggs out of their diet completely ... 2-4 eggs/ week s acceptable! - 4/12/11

    Try draining yogurt overnight in fridge. Put coffee filter in a glass add yogurt and it will drain and be very thick, this works with any kind of yogurt. Just be sure it does not sink to bottom. Works with a couple of tablespoons, not the whole container! - 2/12/10

    Sorry, it sounds healthy and all, but not something I like in ingredients. I just made egg salad today and used Omega 3 eggs and Mrs Dash Marinade. With a little mustard. Its pretty good and healthy too. :) - 3/27/09

    I have never tried tofu before so I was alittle apprehensive. I tried this recipe because I wanted some different lunch recipes. I put it in a kangeroo pocket. I love egg salad and this tastes just like it. I think it needs more pickles and onion or maybe just a splash of the pickle juice. - 9/4/12

    I would never have thought of doing this with tofu, great idea, but I still prefer using boiled egg whites (no yolks) for a no cholesterol egg salad, and I used Fage nonfat yogurt (thick). I usually use fat-free mayo but it would be too runny with the tofu. - 2/12/10

    Sorry, tofu just doesn't satisfy my palate, I use real eggs but take out most of the yolks - maybe 1 or 2 when I use 6 eggs. Dr says this is fine as long as we don't eat them every day. - 2/12/10

    too bad it isn't vegan :( why cancel out eggs when you are still going to use yogurt?? I guess because of the calories/cholesterol but still...I would love to try a vegan version of this recipe! - 10/8/08
