Ingredients

680g or 1-1/2 lb beef tip (or stewing steak)
    2 cloves garlic
    2 tbsp lime juice
Dash salt and pepper to taste
100g or 3/4 cup chopped onion
150g or 1 cup chopped carrots
    1 tsp marjoram
    400g or 10.5oz chopped tomatoes
    1 beef bouillon cube

Directions

Rub the garlic into the beef, along with the salt and pepper.
Sprinkle the lime juice over the meat.
If you wish, you can leave this to marinate overnight.
Place all the ingredients in a slow cooker and cook on LOW for 8 - 10 hours.
Using two forks shred the meat. You may wish to thicken the sauce or to remove some of the liquid (either by straining or boiling it away).
Serve with warm tortillas, chopped tomatoes, shredded lettuce, cheese, salsa or other extras of your choice. Don't forget to add the extra calories from these to your tracker.
