Number of Servings: 6

Ingredients

    4 cups shredded cabbage
    1 cup grated carrot
    1/2 cup chopped green onions
    1/2 cup liquid egg substitute
    1 cup skim milk
    6 tbsp shredded Swiss cheese
    1/2 tsp seasoned salt
    2 tbsp minced fresh parsley
    2 tbsp shredded Parmesan cheese

Directions

Using nonstick cooking spray, saute' the cabbage, carrot and onions until crisp-tender.
Transfer to a greased shallow 2-qt baking dish (a glass 8" x12" works well).
In a bowl, combine the egg, milk, Swiss cheese and seasoned salt.
Pour over the vegetables.
Sprinkle with the parsley and Parmesan cheese.
Bake, uncovered, at 350 degrees for 30-35 minutes or until a knife inserted near the center comes out clean.

    This isn't quite right. The nutritional data for this recipe is based on 6 OUNCES of Swiss cheese. NOT 6 TABLESPOONS. 4 ounces of most cheese is equal to 1 CUP when shredded. I presumen the Ingredients list should read 6 OUNCES?? Which would be about 1.5 CUPS - 2/1/09

    This was fantastic. I used the bagged cabbage slaw (already has carrots in it) and skim milk mozzarella cheese. EXCELLENT - 3/19/08

    WOW! This was really delicious and an excellent side dish for fish. Great way to use cabbage besides the same old cole slaw. We used 2% mozzarella instead of swiss. I peppered the cabbage/carrot layer pretty heavily before adding the liquid ingreds, since we love pepper. Our kids inhaled it! - 5/23/08

    I made this and added some small pieces of cauliflower, some dried garlic and lots of black pepper. It would have otherwise been a bit bland. I liked it a lot and would make it again and often. - 3/31/08

    I made this casserole tonight. I really liked it. I am a vegetable person and these vegies were for me. I added a cut up sweet potato and a regular onion plus some celery- I was using up my veg's. I didn't have any swiss cheese so I used 2% shredded cheddar cheese. Good! - 2/1/09

    This was delicious! I am always looking for new ways to cook vegetables. My husband wasn't too thrilled at the thought of cabbage, but he liked this! I used a bit less cheese, and next time I would use a bit more seasonings (matter of taste), but the mix of the onion, cabbage and carrots was great! - 5/20/09

    I loved it but would mix the swiss chees in with the cabbage mixture next time - that would give a cheesier flavor throughout! I also added pepper since we love pepper on our food. - 1/10/09

    awesome dish...I used regular onion mozz cheese and added a sprinkle of garlic powder and insted of milk used cream for a lo carb effect and it was to die for :) - 3/20/08

    This is a delicious recipe. I made a major mistake by putting zucchini in with it which made the casserole kind of runny, so I won't be doing that again! The flavors with the cheese was really tasty!

    I haven't made this yet, but I know I will add it to my 'cabbage' collection. If there is one vegeteble that takes to more forms of preparation than any other, it is cabbage. Creamed, stir/fried, stuffed, gratined, slawed, soup, --- name it. Can't do all that with many other vegetables! - 5/16/09

    I wasn't sure that I'd like this, but it was great! Hubby loved it, too! It doesn't look very appetizing, so kids might not even try it (like one of mine). I'm not a fan of Swiss cheese, but I wanted to make it like the recipe called for. The strong Swiss flavor is just right! - 2/9/09

    We really liked this and the only change I made was to use low-fat, low-sodium swiss cheese. Next time I will add some garlic and maybe a couple of tablespoons of pre-cooked crumbled bacon. - 3/25/08

    This would make an excellent, healthy base for a brunch dish. It's a little dull as it is, but we're going to start adding some sausage and doing it as a healthy morning option.

    I also made this ahead of time and it turned out great. Just adjust the cooking time.
