Number of Servings: 6

Ingredients

    1 medium onion, chopped
    1 large carrot, chopped
    1 stalk of celery, chopped
    2 large cloves of garlic minced
    1/2 tsp dried oregano
    1 medium potato
    2 cups beef broth
    1 can stewed tomatoes
    14 oz Turkey Sausage, sliced
    1 can black beans
    Salt and pepper to taste
    Pam cooking spray

Directions

1. Heat large pot with low fat cooking spray. Add onion, carrot, celery and salt and pepper; cook and stir over medium heat until vegetables begin to soften.
2. Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in sausage and beans. Cover and simmer gently for at least 1/2 hour to blend flavors.

You can prepare this dish ahead of time for a gathering and instead of simmering for 1/2 hour, put it in your crockpot on low. By the time you are ready to eat (try to make it at least a half an hour) it will be ready to go. Great for potluck as it only gets better the longer it sits.

    Very Good
    I added yellow bell peppers and some tabasco, cumin and by complete accident from not reading my seasonings properly: ground cloves. It actually came out really good! I let it cook in the crockpot on high for 2 hours before serving. Would definitely make again! - 1/20/10
