Number of Servings: 16

Ingredients

    Salad:
    4 Broccoli heads, chopped small
    1/4 cup toasted almond pieces
    1/2 cup golden raisins
    1/4 cup bacon bits

    Sauce:
    1 cup fat free mayonnaise
    1/4 cup granulated sugar
    3 tbsp apple cider vinegar

Directions

Chop broccoli into small pieces.
Toast almond pieces in frying pan.
Add broccoli, almonds, raisins and bacon bits to large bowl.
In separate bowl, mix mayo and sugar.
When combined, add apple cider vinegar and mix very well.
Add dressing to salad right before serving so salad will be crisp.

    This is wonderful! I made it today and used Splenda in place of sugar since my dh is diabetic. We loved it. Would be a great dish for a salad or potluck dinner. It's also going on my list of holiday meals side dishes. Soak the raisins in a cup of hot water for about 5 minutes, then drain. - 1/18/09

    I have made something similar to this, try unsalted sunflower seeds if you don't like almonds, and seedless purple grapes instead of raisins for a twist. Add some shredded cheddar cheese. Also substitute Balsamic Vinegar 1-1/2 to 2 tbsp instead of cider. EXCELLENT!!! - 6/28/07

    Made this for a barbeque we had yesterday. Everyone loved it. Instead of waiting to add the dressing, I mixed everything together and let it marinate in the fridge for a few hours. REALLY good. Veggies and everything were still crisp. Thanks for the recipe, I can't wait for the leftovers! - 4/21/08

    This looks like a reduced fat version of Joan's Broccoli Madness from Soupplantation/Sweet Tomato. I use light mayonnaise instead of fat free but use less of it on the salad. The the other half of the dressing keeps for up to a week in the fridge. I also use a raisin medley from Fresh & Easy. YUM! - 3/3/11

    Brought it for a pot luck and the bowl was empty when I brought it home! Didn't use all the dressing, considered using Splenda instead of sugar, but the calorie count didn't really warrent it, so I left it as is. Used salad topping sliced almonds right out of the bag. Great recipe. - 2/9/11

    I cooked the broccoli as raw is supposed to be hard on the thyroid and mine needs all the help it can get. Instead of almonds, I used a mix of seeds (flax, sesame, wheat germ). Instead of bacon and all the nitrates, I used the new Maple Leaf turkey slices w/o preservatives, chopped. Still yummy! - 10/14/10

    I cut the recipe in half, didn't have the almonds or raisin's, and it was a bit on the sweet side, but I added in the bacon bits and some shredded sharp cheddar cheese. I'll try making the whole recipe next time to see if the sweetness evens out! :) - 8/10/10
