Ingredients

    1 medium sweet potato (about 6 ounces)
    2 tablespoons chopped red onion (about 1/4 small onion)
    1/4 bell pepper, diced (about 1/4 cup)
    3 ounces cooked skinless chicken breast, chopped
    1 tablespoon barbecue sauce
    1 tablespoon shredded reduced-fat Cheddar
    1 tablespoon fat-free Greek yogurt
    1 teaspoon chopped cilantro

Tips

In summer, swap corn for the peppers.
Meatless Meal: Use 1/2 cup drained and rinsed pinto or black beans in place of the chicken.


Directions

Pierce the sweet potato several times with a fork or knife. Microwave until tender.
Meanwhile, place a small skillet over medium heat and coat with cooking spray. Add the onions and cook for about three minutes, until they start to brown, then add the peppers and chicken.
Cook another two minutes, then stir in the barbecue sauce and one tablespoon water. Turn off the heat.
Place the sweet potato on a cutting board and use a knife to cut open the top. Scoop out most of the flesh and add to the pan with the chicken and veggies.
Place the sweet potato in a bowl, then gently scoop the chicken and veggies into and on top of it.
Top with the Cheddar, yogurt and cilantro, and serve immediately.

Serves 1.

    A lot more delicious than I expected! The only thing I did differently was substitute fat free sour cream for the Greek yogurt (not a yogurt fan). Otherwise, everything was the same. I will definitely be making this again! - 4/17/13

    This was the first time I've ever made anything like this with a sweet potato, I didn't think the cheddar would be a good taste combination. I was surprised how good it tasted, but since I am not a cilantro fan, I left that part out! - 5/5/13

    Why why why does almost every recipe have bitter cilantro,
    jalepinos, etc. ? I always leave them out. But why have they been added anyway. We all don't have Mexican tastes.

    This recipe was fun and easy to make, and turned out to be a very filling and delicious meal. The potatoes I used were too big, so the potato ended up overpowering the other ingredients. But with smaller potatoes, I'm sure there would be a better balance. Will definitely be making this again! - 2/23/14
