Ingredients

    1/4 cup sugar
    4 teaspoons cornstarch
    1/4 teaspoon salt
    1 2/3 cups 1% milk
    2 egg yolks, lightly beaten
    3/4 teaspoon vanilla extract
    3 cups mixed berries

Directions

In a small saucepan, combine sugar, cornstarch, and salt. Stir in milk until smooth. Cook and stir over medium heat until thickened and bubbly. reduce heat; cook and stir 2 minutes longer. Remove from heat.

Stir a small amount of filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from heat

Gentl7y stir in vanilla. Cool to room temperature without stirring. Transfer to a bowl; press plastic wrap onto surface of custard. refrigerate for at least one hour.

Just before serving, spoon 1/4 cup of berries into each parfait glass; top with 2 tablespoon of custard. repeat layers.

    Kids loved so much we're having again tonight! Used skim milk, texture perfect. Had ours with blueberries & bananas (what we had on hand) and adjusted calories for bananas. It's easy and a keeper. Thanks! - 2/4/14
