Ingredients

    Barilla Manicotti 13 noodles
    Mushrooms 2c fresh
    Garlic 1T
    Spinach, fresh 5oz
    Egg white 1
    Fat Free Ricotta cheese 15oz
    Classico Tomato & Basil Sauce 26oz
    Parmesan Cheese, grated .125c
    Mozzarella Cheese, part skim 6oz
    Olive oil 1tsp
    basil 2T
    Red peppers .5 medium pepper

Directions

Oven to 350. Cook noodles 7 minutes, rinse in cool water. Heat oil add mushrooms, peppers, garlic and spinach. Stir together egg whites, ricotta and basil. Stir in mushroom mixture. Pour 3/4c sauce in bottom of 9x13 baking dish. Stuff shells and place on top of sauce. Pour remaining sauce over shells and sprinkle with cheeses. Bake 30 min covered, uncover and bake for 10 more minutes. 13 servings

    Very Good
    Husband and kids ate it so it must be a hit! Chopped the peppers and mushroom really tiny like secret ingredients. The directions leave a little to be desired - chop ahead of time and you'll be fine. - 3/19/08

    Very Good
    We really enjoyed this Italian dish, the peppers gave it such good flavor. We do not like the texture of mushrooms so I cut them up tiny so it would still have the great flavor, yummy! - 3/12/08
