Ingredients

    1 Cup Quinoa prepared with Chicken Stock
    2 Cups chicken stock
    1 1/2 lbs Boneless, Skinless Chicken Breat Tenders
    4 Tbsp Garlic Flavored Olive Oil
    1 small onion, thinly sliced
    1 red bell pepper, seeded & thinly sliced
    1 yellow bell pepper, seeded & thinly sliced
    5 cloves of garlic, thinly sliced
    20 leaves of fresh basil, julieene
    Grated Parmesan Cheese
    Salt & pepper to taste

Directions

Cut chicken into 1 in. pieces. Heat large nonstick skillet over high heat and add the oil. Add chicken and saute for 5 mins. or until golden brown. Add onions, bell peppers; saute for 1 - 2 more minutes; add garlic and saute until the peppers become slightly limp, but still bright, about 1 - 2 minutes; season with salt & pepper. Remove pan from heat; add basil & quinoa. Toss until basil wilts; garnish with Parmesan Cheese. Serves 4.

    The calories listed are for one serving but this recipe makes 4 servings so divide the nutritional information by 4 to get one serving. I make this recipe often. Tasty and delicious. - 8/8/10

    Nutritional info definitely skewed...it says 1c Parmesan cheese in the breakdown but the recipe doesn't call for 1c plus the recipe is for 4 sv. If you take out the parm cheese, the single serving would be: 475 cal, 20 g fat and 19 g protein. Cut the oil by half and even less!! - 4/1/11

    Incredible!
    I love this recipe. The ingredients make enough for 4 people but as I cook this for only myself I like to half the ingredients and use the leftovers for a cold lunch the next day. Absolutely gorgeous, this is one of my favourites. - 9/21/12

    So easy to make even without all the ingredients listed. I substituted broccoli for peppers and to decrease the calorie count, I used 2 cups of cooked Quinoa in - 4/12/11

    Incredible!
    This fabulous - very flavorful. I used about half the chicken, though, and only 1 Tbsp of olive oil. I also had to use dried basil, but it did the trick! You could also decrease the quinoa if you wanted - I used about 2/3 of what it made. - 1/4/10
