Ingredients

    1 cod fillet
    1-2 cups spinach
    1 can diced tomatoes
    1 tbsp parmesan cheese (light if you can find)

Directions

Makes a large serving for one, or 2 small servings for 2 people.

preheat ovent o 300 degrees f.
wash spinach, lay in casserole dish.
put cod on top of spinach.
pour tomatoes over fish and spinach and sprinkle cheese and pepper over top.
bake until fish is cooked through, until it flakes.

    Will definitely make again. I used low sodium diced Italian tomatoes and sliced sweet onions over the spinach. Served with a side of couscous. It was great! - 2/3/10

    Very good recipe, I added 1 tbs of fresh garlic, 2 tbs of lemon juice and 1/2 tbs pepper flakes and it was delicious, will make this again, thanks for sharing the recipe. - 4/12/12

    Awesome and easy. Have used on more than one occasion. Used fresh tomatoes from garden as well as fresh spinach with fresh garlic. Yummie! - 1/4/12

    This recipe is easy and delicious! I didn't feel deprived at all! Remember that spinach shrinks down when cooked so use it all. - 6/7/11

    Yummy! Only problem I had with this recipe was there wasn't a clear cut time for baking. 300 seemed too low, so, after 20 minutes, I jumped it up to 350. 15 minutes later, it was done!

    Very very tasty. I added some garlic, lightly seasoned the cod with s&p. Served with some sauteed zucchin

    I thought this dish was simple, super healthy, quick cooking, easy clean up, and just delicious. I will definatly make it again. The only thing I did different was add a salt free garlic and parsley seasoning to each layer of the dish. I think it would have been fine without it too. - 3/26/09

    I am going to modify this recipe a bit too.
    heat oven to 375 degrees.Then layer either chopped or sliced onions on top of the fish AFTER the tomatoes
    Lastly, sprinkle garlic and cheese on the fish.
    May add some chili sauce to perk it up a bit.
    Cook for 15 Mins.
