Introduction

Ingredients

2 cups of Macaroni
2 tablespoons of butter
2 tablespoons of flour
1/4 teaspoon of salt
1 cup of skim milk
1 cup of cheddar cheese, shredded
Directions
While noodles are cooking-
Put small sauce pan on medium heat. But in butter, flour and salt and stir. Pour in milk and continue to stir until it is thick sauce. Turn off heat and stir in cheese until smooth.
Drain noodles and mix cheese into it.
If you desire- Put in a baking pan, cover in crushed saltine crackers and bake on 250 degrees for about 15 minutes.
(Makes it extra good)

Great mac and cheese! There's nothing processed here. I ate a serving and a half for dinner; 450 calories for a meal isn't too bad. I served it with a nice salad. Tried a second time with some chopped onion, basil, and oregano mixed in-amazing! Also good with mushrooms, spinach, and onion salt. - 5/14/08

I am making this tonight and cutting it in half, there are just me and my hubby....I am finally learning to slash our recipes inhalf , daughters are grown and away from home, but I found myself still cooking for 4....that meant over eating, too many leftovers and lots of wasted food. Maybe I did something wrong, but I did not enjoy this. It had very little flavor and there was too much sauce for the noodle amount. I even added onions when I boiled the noodles and some oregano and chili powder to the mixture. I think it's the skim milk and the amount of milk that does it. - 6/13/11

I made this with leftover cheese from party trays. It tastes fabulous but I'm not sure it's very healthy (lots of sodium and carbs). So it only gets 3 stars from me. I can't eat this but I'll serve it at our next get together. I also put extra shredded cheese and crushed cheese crackers on top. - 9/3/10

I just tried it and it was soooo yummy! I was surprised at how thick the cheese sauce was. Good for sticking to the noodles. I had made cottage roll last night so I add some leftover pieces in. Pork, cheese and noodles. Man oh man! Oh and I put whole wheat bread crumbs on top instead. Thank you!! - 1/15/10
