Ingredients

    1 Tbsp peanut butter (organic, no salt, no sugar)
    1 Tbsp almond milk
    1 tsp stevia
    1 Tbsp ground oats
    1 egg white

Tips

    I added an extra tbs of oats and microwaved for 30 seconds to get a thicker consistency, then I formed into a cookie shape and microwaved an additional minute. After that, I popped it into the freezer for 10 minutes because I didn't want a warm cookie. :) Thank you for sharing. - 9/18/13

    I used a whole egg, brown sugar and coconut milk. Double batch made 6 tbsp size cookies. I added pinch of baking powder and soda and topped each cookie with 5-6 mini choc chips. Cooked 3 min till dry. Checked each min. Nice quick fix and no batch of cookies around to tempt you! - 8/1/14

    I'm not familiar with all the specifics of clean eating but I enjoy this a lot. I make it quite often for my dessert. I did add a couple drops of vanilla extract to boost the flavor. I tried it with whole wheat flour and it was ok. I like the texture and flavor of the ground oats better. - 3/5/14

    I tried to make this cookie as she suggested using whole oats since I do not have a food processor. It did not work. The batter was way too runny. I did get it to cook but then it was pretty flavorless. I also microwaved for an extra 30 seconds as 1 minute was not enough. Won't do it again. - 1/25/15

    I made this with oat bran, as my oats were fullof moths and cobwebs, PB powder, brown sugar instead of stevia, and ordinary milk, with a pinch if bicarb instead of egg white. Brilliant! I shall now make the mix in bulk! - 9/14/14

    First time I made it, I missed the ground oats part. Oops. It was like a scrambled egg with oats and pb in it. Made it again and it turned out ok. It won't ever taste like or resemble a real pb cookie to me, but it's a decent, quick replacement. - 8/15/15

    I doubled the recipe. Changed ingredients to natural pb, 2% milk, sugar, unbleached flour and egg whites. Split the batter and microwaved separately. I ended up with two pancakes. :( - 1/21/14

    It really makes a difference to specify what microwave wattage and settings used when providing recipes please. The difference between 800 Watt and 1200 Watt microwaves is significant. I now must play with the recipe to use normal ingredients and my own 900 W microwave. Note: bland don't = healthy. - 5/1/21
