Turn veggies into a touchdown of a game-day dish! Turn veggies into a touchdown of a game-day dish!
Number of Servings: 16

Ingredients

    1 pint grape tomatoes
    4 cups baby carrots
    4 cups broccoli
    (or any vegetables you prefer!)
    2 green onions, whites only, cut in half lengthwise OR
    a few strips of jicama

Directions

Arrange the tomatoes in the shape of a football in the center of a large platter. Arrange the other vegetables concentrically around the tomatoes, one vegetable at a time.
Place the whites of the green onion OR the jicama in the center of the tomatoes, to resemble the laces on a football.

Serving Size: Serves 16; serving size varies based on vegetables used

    I had to use Jack cheese strips for the laces, to even get anyone to bother with the veggies. Also need to precook the carrots so they were not so hard, so people could get some A vitamins from them, raw carrots are nothing but fiber, period! - 9/30/16
