Introduction
I stole this recipe from memebr MrsMohr.... she was on vacation and I wanted to add all the stuff together, so this is hers!! It is the only mashed cauliflower recipe I actually love! Ingredients

1 head of Cauliflower
1 cup low sodium Chicken Broth
4 oz. Cream Cheese, 1/3 less fat
2 Tbsp. Light Butter
1 tsp garlic powder
1 tsp parsley
1/2 Cup 2% Shredded Cheese
Salt & Pepper to taste.
Directions
Preheat oven at 350.
Break apart head of cauliflowe and steam in pan with 1 cup of chicken broth until cauliflower is soft.
Drain broth and put cauliflower on paper towels to dry off the extra moisture.
Mix with a hand or standing mixer the cauliflower, cream cheese, butter, parsley, garlic powder and salt and pepper.
Pour in a small casserole dish.
Top with shredded cheese.
Bake for 15 minutes.

I made mashed cauliflower for the first time and it turned out great! I told my kids it was potato casserole and they ate it with no complaints :) I used 3T fat free herb cream cheese but no butter. It was topped with 2T parmesan and 60g sharp cheddar. I will be adding this to my recipe rotation. - 5/20/12

I've made these so many times since I saw this receipt.....I love it!! Best recipe so far! I used 2 bags of the frozen cauliflower instead of 1 head and kept everthing the same. I also did not bake it after the first time I made it. I just blended the cheese into the mixture and it was delicious! - 9/26/12

I don't mind steamed cauliflower, but this was horrible. It tasted nothing like potatoes, which I could deal with. The texture was awful...total, in all, I don't think I would ever make this again. (My 8-year old really hated it, and she had no clue what it was...we just told her mashed potatoes) - 1/13/09

OMG. Why eat potatoes anymore. I used one vegetable boullion instead of chicken broth and 4 oz of whipped cream cheese to cut more fat/calories. It was awsome. I doubt that I will ever eat garlic mashed potatoes ever again. It doesnt even need the cheese or the fifteen minutes to bake!!!!!!! - 1/16/08
