Ingredients

2 cups low-carb baking flour
1/2 cup no calorie sugar substitute
2 tables spoons ground flax seed
1 tablespoon baking powder
1 teaspoon ground ginger
1 1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1/4 teaspoon ground cayenne pepper
1/8 teaspoon ground clove
1/4 teaspoon salt
2 large eggs
1 tablespoon coconut oil
1/2 cup canned pure pumpkin
1/4 cup canned coconut milk
2 teaspoons vanilla extract
1/2 teaspoon almond extract
1 cup club soda
Directions
Heat oven to 350*F
Oil muffin tin
In a large bowl sift together dry ingredents, flour, sugar substitute, ground flax seed, baking powder, spices and salt.
In another bowl combine eggs, coconut oil, pumpkin, coconut milk, vanilla extract, and almond extract.
add egg mixture to flour mixture and combine.
Stir in club soda
bake muffins for 15 to 25 minutes.
Serving Size: makes 12 muffins

These are excellent with some modifications I did. Low carb baking mix = 1 3/4 C Almond Flour, 1/4 C Coconut Flour, and 1 tsp. Xanthan gum. 1 1/2 tsp Ginger (noted twice on this), leave out Cardamom (Too expensive!) and I used 1/2 tsp. of 5 chinese spice. Use a zero calorie carbonated drink. YUMMY! - 3/27/16
