Ingredients

1 cup sugar
2/3 cup canola oil
1 14 oz can light coconut milk
1/4 cup rice milk (or soy or almond milk)
1/4 cup lemon juice
3 T finely grated lemon zest
2 t vanilla extract
3 cups flour (organic whole wheat pastry flour)
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup green frosting
Green sprinkles
Directions
Preheat the oven to 350* . Lightly grease an 8 or 10 inch bundt pan. In a large mixing bowl, combine the granulated sugar, oil, coconut milk, rice, soy or almond milk, lemon juice and zest and vanilla. Stir to combine. Sift the flour, baking powder, baking soda, and salt into the wet ingredients in batches, mixing well after each addition. Pour the batter into the Bundt pan. Bake for 1 hour, or until a knife inserted through the cake comes out clean. Remove from the oven and let cool for about 10 minutes, then place a cutting board over the cake pan, gently flip over, and release the cake from the pan. Let cool completely.
Drizzle with frosting and sprinkles
Slice and serve.

The recipe that I am looking at has 188.2 calories per serving. Is that wrong? Where is everyone getting over 500 calories per serving? I even looked at the nutritional breakdown.....still not 500 plus calories per serving. Now I am afraid to make this for I don't know correct caloric value. - 3/8/15

I got a chuckle out of this recipe with all the healthy ingredients. Then, green frosting (sugar, saturated fats, food dye) & green sprinkles (more more sugar & food dye) which may or may be vegan.
By the way, who has EVER been able to get 24 slices out of a bundt cake? 16 maybe, but not 24. - 3/8/16

I too am confused at where people are getting the over 500 calories per serving here.
BUT...I agree this is not the site to have this type of recipe highlighted into my email.
AND~~in my email it says recipe serves TWELVE (12 ) BUT when I go check the recipe it says serves TWENTY FOUR (24 ) !!!!!! - 3/8/15

I've been doing this long enough I have some better health suggestions:
1) a pretty green doily under your health food
2) green food colored angel food cake (higher protein due to those egg whites)
3) ricotta cheese, splenda and kiwi parfait
Yep stay away from this one - poor choice to highlight - 3/1/15

LoL, maybe this was a test to see if you read EVERYTHING and you do! Nice to know there are ways to cut calories. Every now and then some people can splurge without sabotaging everything they have accomplished while others like me, this would put me back many more steps than I'm willing to risk. - 3/11/14

Altho I have never tried this recipe, I think the key issue is moderation. Every now and then a high cal, etc snack can help us in our journey. I see healthy ingredients. I guess it is the "luck of the Irish" cake since the saying refers to all their bad luck with the famine etc. I think I would have as much bad luck if I thought I could eat this cake since I am trying to only eat 1800 cals and 135 carbs a day one slice is half my carbs and about 1/4 my calories. - 3/8/14

It MAY BE "FESTIVE"; but it is hardly "LIGHT", at 552.4 CAL & 77 gr. CARBS per SERVING! I think I gained 10 lbs. just "READING" the ingredients! "EL PASSO" for me! LOL
