Ingredients

1 Banana - small (6" to 6-7/8" long)
1/4 cup Egg Whites
1/3 cup Water
1 scoop Sunwarrior Protein (Raw Vegan Natural)
1 tsp Organic Brown Sugar (unpacked)
*cinnamon, nutmeg, ginger, clove, other spices to taste*
Tips
These cook up quick so keep an eye on them. I have made countless versions of these pancakes changing the spices and adding sweet or savory things to the batter, have fun and experiment!
This recipe can easily be doubled or made in advance for a quick breakfast.
Directions
Step 1
Mash the banana in a bowl with a fork until it has an oatmeal-like consistancy.
Then add the egg whites, water, protein powder, brown sugar and what ever spices you choose. Mix well until it becomes a batter.
Step 2
Spray a non-stick pan with cooking spray (or use a tsp of coconut oil) and pour the mixture into the pan (I use about 2+ tbsp per pancake)
Step 3
Cook for approx 2 min or until cooked & flip when bubbles begin to form on top and the edges begin to brown.
Step 4
Serve with Greek yogurt, agave nectar, PB2, nut butter of choice, chopped banana - the possibilities are endless.
