Ingredients

    1 cup coconut water
    1 avocado
    1 t grated fresh ginger or 1/2 t dried ginger
    1 scoop vanilla protein powder
    2 T lime juice
    1 cup frozen pineapple

Directions

Combine all ingredients except the pineapple in a blender and process until smooth. Add the pineapple and pulse a few times, then process until smooth. Add water or ice, if necessary, to reach desired consistency.

Serving Size: Makes 2 smoothies (about 1 1/2 cups or 12 ounces each)

    Delicious. I really liked it. I made it with pineapple coconut water. I think the kind of vanilla protein powder you use can make or break this recipe. I will be having this again tomorrow for my 4:30am breakfast. Definitely freeze the pineapples or add ice. - 12/15/14

    Made the recipe exactly as written and it tasted great. However, I only got a 16 oz yield. I recalculated the ingredients in case the ones I had were different numbers. My ingredients came in over 600 calories. High fat and high sugar. Will make again but only for a meal replacement after work - 11/9/17

    Skip the protein powder & use fat-free Greek yogurt - more protein, and no artificial ingredients. 1 cup has 23 grams protein, 130 calories, 9 grams carbs, 0 grams fat, 85 mg sodium. But you can use less if you choose. - 4/25/17

    I just made this for breakfast, exactly as written. It was delicious and so smooth. I ate half for breakfast and poured the rest into four popsicle molds for a delicious 65 calorie snack. - 7/14/16
