Ingredients

    1 pd ground beef
    1 7ox can of mushroom stems and pieces
    2 (14 oz) cans of Swanson vegetable beef broth
    1 cup uncooked long grain brown rice
    1/2 onion
    salt and pepper to taste
    1/4 tsp of onion flakes (if not using onions)

Directions

brown ground beef and onion, drain, return to large skillet. Add mushrooms and beef broth, salt, pepper, and/or onion flakes. Cook on med to high heat, add beef broth. Bring to boil, turn down heat, cover and continue cooking until rice is done. Makes about 8 1-cup servings at @157 calories per serving

    Calories are wrong since the rice calories are based on cooked rice, but the recipe calls for uncooked rice. That will add at least double the rice calories if not more, since brown rice more then doubles when cooked. - 5/5/10

    I made a few variations as well. Instead of the mushrooms I used a can of mixed veggies, and I used 2 cans of chicken broth. I also used a little soy sauce for added flavor, and after it was all cooked, I sprinkled some shredded cheese. - 10/4/09

    I made it, but used chicken broth since I was out of veg. beef and decided to add 1 can black-eyed peas. Smells great! I think it will also taste great! Thanks for the recipes that are ingredients most of us have in our pantry! :D - 9/1/09

    How is the rice cooked? Is it in the mixture or separate? When do you add the rice? How does that add to the calories? If you cook the rice seperate and spoon beef mixture over how much rice do you use as a serving? Thanks. - 8/6/09

    Since I didn't have any broth, I decided to add 7 oz of water and 7 oz of marsala cooking wine, and a dash of rosemary. It's very good! I love this :-) Except, the rice didn't cook enough so add a bit more water to your meal and let it cook a little longer. I'd say about 3 or 4 more minutes. - 6/29/09

    This is good. I like the fact that it's different. When I have ground beef, I often resort to making goulash, which I find very boring. This is a nice change of pace and an inexpensive meal, even if my kids won't eat mushrooms. - 4/8/09

    This was good. I added broccoli and cauliflower with it and the worchestershire as suggested. It was a little lacking for me as well until I did that. But a great meal for the calories! - 3/15/09

    I live alone and love recipes I can cut down easily. A little lacking in flavor for me so I added a dash a worchestershire and some diced green peppers I had on hand. To increase the fiber I threw in some chopped broccoli I had. - 2/15/09
