Introduction

This tasty one-pan dish will quickly make its way into your weekly meal rotation. This tasty one-pan dish will quickly make its way into your weekly meal rotation.
Number of Servings: 6

Ingredients

    1 lb of lean ground beef
    1 onion
    1 green bell pepper
    2 cans (32 oz) of stewed tomatoes
    1 cup Mahatma uncooked long grain rice
    1 cup water
    1 tsp chili powder
    1 tsp oregano
    1/2 tsp garlic powder

Directions

1. Cooked ground beef, chopped onion and green pepper in dutch oven until meat is browned.
2. Drain in colander, pat dry with a paper towel and clean pan with paper towel.
3. Return meat mixture to dutch oven, stir in remaining ingredients. Bring to a boil; cover, reduce heat and simmer for 30 minutes or until rice is tender, stirring occassionaly.

    This was wonderful but I substituted ground buffalo sausage for the beef and used two cans of Rotel Tomatoes instead of the onions, peppers, and stewed tomatoes (saved a lot of time). Also added fresh mushrooms and used brown rice. - 4/7/08

    I added 1/2 tsp. ground cumin, eliminated the bell pepper, and added an extra 1/2 tsp. chili powder. I also used a brown long grain rice, which increased the cooking time to 50 minutes, but the nutty taste blended wonderfully with the spicy nature of the "chili". Definitely a hit at our house! - 2/4/09

    For more spice I used one can of Rotel and one can of diced tomatoes. Also used brown rice and cooked a bit longer (10 min.). - 3/31/08

    This was great! I took other people's advice and was generous with the spices. Next time I will add even more. My rice was still a bit hard after over an hour so I'll let it simmer longer next time. - 4/17/09

    If the rice was too hard that means that you did not have enough liquids. Maybe add 1/2 c of water to it. - 6/2/09

    I was looking for a "Spanish" recipe. My husband is a big soccer fan and Spain won yesterday, so this will be tonight's dinner in honor of their victory. Sounds yummy and so easy. Will let you know how we liked it.

    This was very yummy! The added beef made it so hearty, a meal in itself. I added a lot more chopped peppers, for extra veggies, and it came out well. The chilli powder added good flavour!

    Yummy! I used instant brown rice and saved 20 minutes. Added salt, pepper, and broccoli. Also replaced the garlic powder with thin sliced garlic clove. Will definitely be making this one again. - 9/14/09

    This is just the way I have made it for years but without the name brand rice. Never thought to use Oregano in it. Once in a while instead of x-lean hamburger, I use a bit of Bacon. - 9/12/09

    It's quite similar to the recipe I already use. I use spicy oregano from my garden, which is like the regular with a bit of a kick and usually add some jalepenos. It's always a big hit. - 9/11/09

    The only change I made was to leave out the green pepper from the mixture, but added the mixture to blanched green peppers, to make wonderful stuffed peppers, using ground turkey instead of the beef. - 9/11/09
