Ingredients

    1 cup Brown Rice, long grain
    1 Yellow Pepper
    1 Green Pepper
    1 Red Pepper
    1 cup cubed Pineapple
    1 can black beans, cleaned and rinsed
    1 cup salsa

Directions

Cook rice as directed on package. Spray large skillet with cooking spray; stir-fry peppers until crisp-tender. Stir in pineapple, black beans and salsa, heat through. Serve over cooked rice. Serves 4. Total time 25 minutes.

    Great recipe! Easy and tasty! I didn't have the coloured pepperso so I used the green peppers and also used zucchini and carrotts for a bit of colour and flavour. Also used a bit of the Epicure Asian Stir Fry seasoning in the veggies. Yummy! - 7/31/11

    Fantastic! Added a couple of shakes of salt to peppers while cooking them along with a couple of shakes of Mrs. Dash Garlic Herb Seasoning. Also sprinking on some Tajin fruit seasoning (ground chile peppers, salt and dehydrated lime juice). Made home made salsa to go with this and wow-yummy! - 7/24/11

    I made this last night and incorporated the jalepenos AND hot salsa. This wasn't the best idea! It was delicious, but very very HOT! I think that using mild salsa and a jalepeno would be the perfect balance. Thanks for the great article and great suggestions! We will make this again! - 1/16/10

    If you want to taste the salsa, mild will not do. The bursts of sweetness from the pineapple were the star of this dish. Mixing some juice in the salsa might be good. Garlic sounds good too. - 11/4/09
