Number of Servings: 6

Ingredients

    3 Tbsp Olive Oil
    1.5 c chopped mushrooms
    0.5 c chopped onions
    1 clove garlic finely chopped
    1 c long grain brown rice
    1/8 t ground black pepper
    2.25 c chicken or veg stock
    1/4 t salt

Directions

Makes 6 side servings, or 4 main course servings
Preheat oven to 350 degrees F
Heat in a 2 quart stovetop to oven casserole over med-high heat
3 Tbsp olive oil
Add and cook stirring until the mushrooms are lightly browned:
1.5 c mushrooms
0.5 c onions
1 clove garlic finely chopped
Add and stir until coated:
1 c Long grain brown rice
1/8 t ground black pepper
Add:
2.25 c chicken or veg stock
0.25 t salt
Bring to boil. Cover and bake untill rice is tender and the stock is absorbed - about 45 minutes. Let stand covered for 10 minutes before serving.

    I tried this recipe for the first time tonight. I made it without the broth and it was a little bland. I rated it incredible because I know it will be the next time I make it and use stock instead of just water. Be sure to use the chicken or vegetable stock. It really adds to the flavor. - 2/15/13
