Ingredients

    1 c. old fashioned rolled oats (not instant)
    1 c. non-fat milk
    2/3 c. unsweetened applesauce
    2 egg whites
    1 tsp. vanilla extract
    1 c. whole wheat flour
    2/3 c. Splenda brown sugar blend
    6 tbsp. unsweetened cocoa powder
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    2/3 c. dark chocolate chips

Directions

1. Soak the oats in milk for about one hour.
2. Preheat the oven to 400 degrees and then spray the muffin pan with cooking spray.
3. Combine the oat mixture with the applesauce, vanilla and egg whites, and mix until combined.
4. In a separate bowl, whisk the dry ingredients together.
5. Add the wet ingredients to the dry mix until just combined. Add the chocolate chips. Do not over-mix of the muffins will be tough.
6. Spoon the mixture into the muffin pan, forming a total of 16-18 muffins.
Bake for 20-22 minutes, or until done. Remove from pan and enjoy.

    These are wonderful!! My husband and I like to take them to the gym and eat one after working out. They help refuel us and satisfy us until our next meal. I always use instant oats so that I don't have to let them soak for 30 minutes. I've tried both ways and can't tell the difference. - 6/5/08

    I made these with some extras including flaxseed, honey, cinnamon, regular brown sugar & a little extra applesauce & extra chocolate chips. Very good and very filling- I baked them for 18 minutes and they aren't overly chewy. - 5/31/08
