Ingredients

    3 large Egg Whites
    2 cup Brown Sugar
    2 Cup Grated Zucchini
    1 tbsp Vanilla
    1 cup Applesauce
    0.5 tsp salt
    1 tsp Baking Soda
    2 tsp Baking Powder
    3 cups whole wheat Flour
    2 tsp cinnamon
    3 tsp Brown Sugar

Directions

Mix Egg Whites and Sugar
Add Zucchini, and Applesauce, mix well
Add dry ingredients slowly, mix well
Spray muffin cups with cooking spray
Pour mix into muffin cups
Sprinkle each with Brown Sugar
Bake at 350 for 20-30 min or until toothpick comes out clean

    I used brown sugar blend in place of regular brown sugar and topped with reg sugar - i also noticed the recipe called for egg whites but detail shows eggs

    I made these the other day, and added .5 cup walnuts, for 150 calories per muffin and 1.9g of fat. DELICIOUS.
    I noticed though in your ingredients details you put 3 large eggs, not 3 egg whites, I think that makes a difference in the nutrition values.

    I made thesefor Sunday dinner. My daughter (also a sparkperson) loved them. We divided them to use for breakfast for the following week. What a way to start the day! I did use applesauce with cinnamon only because I didn't have plain. - 6/17/08

    I made these last night, froze half for on the go snacks. The 12 I left out are already gone. My girls (2 & 4) loved them. The 4 yr old was skeptical when she heard it had zucchini in it. Much to her surprise...they were YUMMY! - 7/27/10

    I halved the recipe so I used 1 whole egg, 1c. wheat flour and .5c. all purpose flour. I also upped the cinnamon and added a little nutmeg. Good muffin! - 7/23/10

    It's a good basic recipe. I prefer it (as did everyone else) with canned pumpkin in place of the apple sauce, pumpkin pie spice for cinnamon and I added a 1/2 cup of pecans. Chocolate Chips would have also been nice in place of the nuts for a treat! - 10/12/10

    I only have one muffin pan so I filled them to the top and put the remainder in a bowl in the microwave for 2 minutes lol it's great LOL We'll see how the muffin's turn out in the oven since they're so full :) - 10/12/09
