I do this with fresh onions, celery and mushrooms as well as plenty of garlic. To reduce sodium, I've added a can of low sodium brown gravy instead of onion soup mix or can of tomatoes and low salt mush. soup. - 10/18/08

Sooo tasty! this recipe is about 1000 years old, but a classic stays a classic for good reason. My BF is gluten-free and I couldn't find GF cream of chicken or mushroom in my neighborhood, so I substituted Butternut Squash soup and used a bag of frozen stew vegetables. Totally delicious! - 8/4/11

This recipe was great, and I try to make it when it starts getting cooler, but for what it's worth, I don't know that the nutrition info that's listed is accurate -- Weight Watchers calculates this at 10 points but when I put it into Recipe Builder, it's more like 13. Just an FYI, but it's YUM-O! :) - 10/28/09

I have been making my pot roast like this for years. Minus the onion soup mix....too salty. Instead I add alittle salt, pepper and minced garlic. Sometimes I skip the potatoes or bake them seperate. I also add in onions and celery. - 9/22/09

This is a favorite in my house, but we use a package of mushroom gravy or brown gravy instead of the onion soup mix (my kids do not like the onion flavor). - 1/22/09

I used stew meat - it is leaner
I am not a fan of mushroom soup - I substituted beef broth low sodium and also some red wine
I also put in a bay leaf and some fresh thyme - I take out before serving

Used ground beef pressed into thick patties (since it's what I had), fresh onions instead of soup-powder, and added a sweet potato and fresh mushrooms. Tasty on it's own, and would probably go well stuffed in kaiser rolls or over rice to stretch the servings. Easy and good. :) - 2/25/13

This is a staple recipe in my house as well. I too used the lower sodium soup. We like things on the spicy side, so instead of onion soup mix, I used peppercorn and garlic with a little bit of worchester sauce. Loved it! - 3/29/10

I was out of cream of mushroom, so I used a can of tomato and basil soup and a packet of zesty Italian dressing mix. The vegetables were so delicious, and so was the roast, although a little dry. - 11/3/09
