Introduction

I got this recipe from McCormick. It tastes great with rice.
You can reduce the sodium by using Less Sodium taco seasonings. I changed the recipe by using Pam to cook the chicken instead of oil.

Ingredients

    1 lb boneless skinless chicken breasts, cubed
    1 pkg taco seasoning
    1 jar (11 ounces) salsa
    1/3 c. peach or apricot preserves
    Pam for coating pan

Directions

Add taco seasoning to chicken and toss to coat. Spray skillet with Pam and brown chicken (about 5 minutes). Stir in salsa and preserves. Reduce heat to low; cover and simmer 10 minutes. Serve over rice, if desired.
Makes 4 servings.

    I have type 2 diabetes, so I lightened it up a little. I used Mexican seasoning on the chicken instead of taco seasoning and used sugar free apricot jam in the salsa. It was great. - 5/22/08
