Introduction

Not your every day potatoes. Goes great with chicken or pork.

Ingredients

    4-6 red potatoes (depending on size and how many you need to feed) - this works well for 2 people with leftovers for another meal
    2 Tbls Onion Powder
    2 Tbls Garlic Powder
    1 Tbls Paprika
    3-4 Tbls Extra Virgin Olive Oil

Directions

1. Cut potatoes in quarters (or more if they're bigger than your palm [depends on how big you want the pieces]) and place in 3-qt microwave-safe dish.
2. Sprinkle all other ingredients over potatoes.
3. Stir well to coat potatoes.
4. Put in microwave on high for 5 minutes.
5. Stir well.
6. Microwave another 5 minutes on high.

    I loved this recipe! I tried them in the oven, and in the steamer...definitely better in the oven. I also used lemon juice too and I really think it gave it that extra zing! Delicious! - 2/3/10

    These are yummy! I also make something similar in the oven with Russet potatoes and onions/minced garlic, but I needed something fast and this was perfect! I would never have thought of cooking them in the microwave. I didn't peel the potatoes & used minced garlic & added some dried onion flakes. - 11/8/09

    I make something similar but I use real onion and minced garlic and bake them in a 9x13 at 350 until slightly golden - 4/23/09

    Love this! Hubby loves it, too. I'm glad it uses garlic powder instead of garlic salt as hubby has high blood pressure. I can add salt to mine (my sodium levels are always extremely low) without him being affected. - 1/7/09
