Introduction

This cool salad mixes traditional ingredients with sweet fruits and a sweet vinaigrette dressing for a refreshing summer taste. This cool salad mixes traditional ingredients with sweet fruits and a sweet vinaigrette dressing for a refreshing summer taste.

Ingredients

    2 or 2.5 cups romaine lettuce
    about 10 seedless grapes
    1/3 cup strawberry slices, fresh
    1/3 cup mandarin oranges (canned)
    1/3 cup chopped apples (with peel)
    1/4 cup granola
    6 oz grilled chicken breast, cut into strips or chunks

Directions

Cook chicken, if not already cooked, and cut into strips or chunks (whichever you prefer). Layer all ingredients in a bowl and top with dressing of your choice. (I recommend Annie's Naturals Raspberry Vinaigrette.) Toss, and enjoy!

    I made this tonight with what I had on hand: green grapes, a fresh peach, apple, and mandarin oranges. Chicken and blueberry granola were topped with a strawberry balsamic vinaigrette... yum! - 9/13/12

    I love this recipe. I am now a chicken salad sandwich fan!!! I did add non-fat mayo, as I like the creamy texture. The best of this sandwich is the occasional texture and taste surprise that happens with the apple and grapes. I didn't have the oranges on hand, but will try next time. - 8/15/09

    I made this without the chicken to go with dinner tonight. It was excellent! I used navel oranges cut into mandarin sized pieces (husband has some digestive issues with mandarins) and it was very refreshing. Will definitely be making again. And again. And again.     Incredible!
    This was a very yummy salad - had it for lunch. I did not have any oranges so I put sliced cucumbers instead and used Kashi Coco Beach granola for the granola - super yummy. Also, did not have time to cook chicken for it, so I left that out. This will be a salad I will make over and over again! - 6/11/08
