Ingredients

    2 c. Fiber One Cereal (or All Bran)
    1 c. flour, whole grain
    1 egg white
    1/4 c. honey
    1 tsp. salt
    1 tsp baking powder
    1 1/4 c. skim milk
    1 cup of blueberries or any berry you want

Directions

Mix together the All Bran, egg, and milk and let sit for a few minutes then add in all the other ingredients.
Preheat oven to 400 degrees and bake in a greased muffin tin for 25 minutes.

    I love this recipe! I make a batch of these weekly. They are only 1 pt. on WW. I have substituted the fruit with raisons, cranberries, dried fruit, and my favorite are CranRaisons. Gives it a slightly sweeter flavor. - 6/9/09

    Bad
    I LOVE any kind of muffins, so I really wanted to like these. Instead, they came out hard, dry and really bland. My kids and husband wouldn't even eat them! Very hard to remove from pan also, even with pan greased. Feel like a waste of good blueberries. Thanks, but will keep looking. - 7/26/12

    I made these using a frozen wildberry mixture and found that even after allowing them to sit in the liquid, the Fibre One never really dissolved. I would not recommend using Fibre One in this recipe. Please let me know if other people used All-Bran. I threw these muffins out as they were not good. - 4/9/11
