This is easy to make and soooo good. Sour cream makes the eggs a little fluffier, without adding too many calories. To cut the fat, take out an egg and add some more veggies. Ingredients

    1/3 cup black beans (canned), drained and rinsed

    1/4 cup chopped green bell peppers

    2 large eggs

    1 tbsp. nonfat sour cream (optional)

    Salsa to taste

Directions

1. Put green pepper and beans into a nonstick pan. Add about a tablespoon of water and sautee for 2-3 minutes.

2. Whisk the eggs and sour cream together until well blended.

3. Add egg mixture to beans and peppers. If you prefer, you may also fry the eggs separately.

4. Serve with salsa!

Makes 1 serving, approximately 1.5 cups.

    Let me tell you I hate eggs, the sliminess, but after making this recipe it completely changed my mind, i used Southwestern grillin beans and it made 2 complete meals with Rotel salsa (PERFECT fiber source) Thank you so much - 7/26/12

    very delicious. I used nonfat greek yogurt in place of the sour cream, and it fluffed them up fairly ok, but I couldn't get them blended very well. I think I'd need a third egg for it, as greek yogurt is so much thicker. Amazing recipe though! - 1/28/14
