This is very good. I used low sodium black beans to cut down on the sodium.
very delicious. I used nonfat greek yogurt in place of the sour cream, and it fluffed them up fairly ok, but I couldn't get them blended very well. I think I'd need a third egg for it, as greek yogurt is so much thicker. Amazing recipe though!
Let me tell you I hate eggs, the sliminess, but after making this recipe it completely changed my mind, i used Southwestern grillin beans and it made 2 complete meals with Rotel salsa (PERFECT fiber source) Thank you so much
used lots of fresh homemade salsa and 1 yolk to every three eggs. Easy to get more veggies and low fat protein um um. Will make again
