Introduction

I like things a little on the spicy side so this is my meatloaf. It has tons of onion and a load of flavor! You can cook it topped with additional ketchup or back it like it is. The only reason I made this is so I could figure out the calorie count but thought I might save others the trouble. Enjoy! I like things a little on the spicy side so this is my meatloaf. This is just like my recipe, except that I use oats instead of crumbs. I also double everything so I can have plenty of leftovers. One more thing - no flavor is lost and a lot of vitamins are added if you add a very well drained and squeezed out package of defrosted frozen spinach. - 4/13/09

I substituted homemade salsa (recipe to come!) for the ketchup, homemade Italian breadcrums, forgot the onion salt, and added barbecue sauce as a glaze for the last 10 minutes of cooking time. This recipe was AWESOME and I will definitely be using it again! - 7/17/08

I put in just a teaspoon of brown sugar and fresh garlic instead of powdered and it was YUMMY. Intended it for just me and my hubby, then unexpectedly had three guests over, and it made just enough! - 10/4/12

A very good basic recipe, I left out the cayenne ( too hot for us)and I lowered the sodium by using Panko bread crumbs and low sodium tomato sauce. The sodium is then 187mg for a 4 oz serving. - 10/23/10

Hot but not very flavorful. I halved the black pepper and next time will leave it out and slightly reduce the cayenne. I used oatmeal instead of breadcrumbs, & I didn't have Worcestershire Sauce so found a substitution online using vinegar & soy sauce - that worked well. - 5/8/10
