Introduction

This recipe came together as a string of mistakes! We only had half the milk we needed, so we added yogurt, and then we forgot the oil that was originally in the recipe! They should of come out terribly, but instead were the best pancakes we've ever made! This recipe came together as a string of mistakes! Ingredients

    1 c Flour
    1/4 c sugar
    1 heaping tsp baking powder
    1 tsp baking soda
    1/2 c skim milk
    1/3 c plain nonfat yogurt
    1 tsp agave nectar

Directions

Mix together flour, sugar, baking soda, and baking powder. In a 1 c measure, add milk and yogurt, and fill remaining space with water. Combine wet and dry ingredients, and add agave nectar. Preheat griddle to 400 degrees. Spray nonstick spray (Must spray every batch! There's no oil in the batter and they WILL stick if not sprayed!) Cook pancakes. Enjoy!

Very good! I have made this recipe several times and tried variations each time, but also love the regular version for good 'ol pancakes. This morning substituted honey for the sugar and agave and added blueberries. Sweet & delicious! - 9/26/09
