These cookies are basically low - everything! Low-calorie, low-fat, low-sodium, but high in Vitamin A, thanks to the pumpkin. And they taste great! They're soft & chewy and perfect for the holidays. Ingredients

    2 Cups Flour
    1 Cup Sugar
    1 tsp Baking Soda
    1 tsp Baking Powder
    1 tsp Allspice
    1 tsp Cinnamon
    1/8 tsp Salt
    1 Cup Pumpkin (not pumpkin pie mix)
    1/2 Cup Applesauce (unsweetened)
    1 tsp Vanilla

Directions

Preheat oven to 350 degrees. In a large bowl cream together sugar, applesauce, and vanilla. Stir in pumpkin, set aside. In another bowl combine flour, baking soda and powder, salt, cinnamon and allspice; stir into creamed mixture and mix well. Drop by spoonfuls onto ungreased baking sheet. Bake for 18 to 22 minutes.

    I substituted 1 c. of the flour with whole wheat flour and the sugar for Stevia and they were very yummy! I also added some chopped nuts. I put them in a mini-muffin tin instead of on a cookie sheet and they were like little muffins! Loved them! - 3/3/13

    I used 1 cup of whole wheat flour and 1 cup of whote flour. I alos added a few mini chocolate chips to add some chocolate. They are very muffin top like. The inside is very warm and moist. I made them for my mom and she enjoyed them as a little healthy treat. Thanks for the recipe! - 11/21/11

    Great recipe. I didn't change ingredient but cooked this in bar form instead of cookies. The intended recipient can't have raisins, but when I make this again I will add raisins and/or dried cranberries. Thanks for posting. - 10/17/11

    I added 1 tsp cocoa powder because I was craving chocolate & didn't have chocolate chips. Hubby calls them mookies - a cross between cookie & muffin. Liked them a lot - 2/13/13

    I got exactly 48 cookies from this. I did not have allspice so I used my own mix of nutmeg, cloves, ginger, and cinnamon. Also, I added dark chocolate squares. They are delicious! - 11/29/12

    These are ok. The texture isn't the greatest, but the flavor is pretty nice. Not sure I'd make them again. But were fun to make last night on Halloween! - 11/1/11

    You need to spray the pan. You won't get 48. They are yummy though. A bit chewy, but very soft and moist. I don't get the comparison to muffin tops, they taste like soft cookies to me. Great pumpkin flavor! I added pumpkin pie spice and some extra cinnamon, and a brown sugar cinnamon glaze on top:) - 9/9/11

    love this recipe, added 1 extra tsp b. powder as I used spelt flour, 2 Tbsp. ground flax and 1 cup semi-sweet choc. chips. My kids love them. - 8/18/11

    Made these cookies today (they're in the oven as I type). So good. I made some plain, some with chocolate chips for the kiddies and some with raisins and sunflower seeds. I used whole wheat and spelt flour just because that's what I had on hand. So good! - 3/6/11

    I doubled the recipe, and probably got half the amount of servings I should have...I made big spoonfuls I guess. But these are fantastic! Like pumpkin muffins! So yummy. I sprinkled a little pinch of sugar in the raw on top before baking for a little bit of a crunchy top on some of them. AWESOME - 12/24/08

    My husband says they taste like muffin tops!! He loves them and I like them because they are a healty option at christmas time. I only bake them fifteen minutes and I spray the cookie sheet, and i use pumpkin pie spice and extra cinnamon. - 11/4/08

    Interesting use of pumpkin! I used whole wheat flour and added a little bit of oatmeal and raisins to 1/2 of the batter before cooking. They were a little hard on the outside. I used cooking spray on the pan after the 1st batch because they were hard to get off the pan. - 8/19/08

    I used parchment paper, and added crushed walnuts and raisins. Amazing! They were telling the truth - just like muffin tops!!! I also used fresh pumpkin vs canned. - 11/24/10

    I made these as directed and they turned out very soft and moist, like muffin tops as others have said. I felt they worked better on an ungreased sheet than parchment paper. I might try some add-ins next time - raisins perhaps? - 10/31/10

    Great Cookies! I used a regular spoon and it made about 40 small cookies. Moist. I only cooked them about 17 minutes. Love them! Kitchen smells great too:) - 1/18/10

    Very Good
    I made theses cookies with my day care kids, very easy. I used brown sugar and pumpkin spice seasoning. Also after reading the comments I sprayed the cookie sheets.
