Ingredients

2 Cups Flour
1 Cup Sugar
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Allspice
1 tsp Cinnamon
1/8 tsp Salt
1 Cup Pumpkin (not pumpkin pie mix)
1/2 Cup Applesauce (unsweetened)
1 tsp Vanilla
Directions
Preheat oven to 350 degrees. In a large bowl cream together sugar, applesauce, and vanilla. Stir in pumpkin, set aside. In another bowl combine flour, baking soda and powder, salt, cinnamon and allspice; stir into creamed mixture and mix well. Drop by spoonfuls onto ungreased baking sheet. Bake for 18 to 22 minutes.

You need to spray the pan. You won't get 48. They are yummy though. A bit chewy, but very soft and moist. I don't get the comparison to muffin tops, they taste like soft cookies to me. Great pumpkin flavor! I added pumpkin pie spice and some extra cinnamon, and a brown sugar cinnamon glaze on top:) - 9/9/11

I doubled the recipe, and probably got half the amount of servings I should have...I made big spoonfuls I guess. But these are fantastic! Like pumpkin muffins! So yummy. I sprinkled a little pinch of sugar in the raw on top before baking for a little bit of a crunchy top on some of them. AWESOME - 12/24/08
