Nutrition & Calorie Comments  

I substituted 1 c. of the flour with whole wheat flour and the sugar for Stevia and they were very yummy! I also added some chopped nuts. I put them in a mini-muffin tin instead of on a cookie sheet and they were like little muffins! Loved them!
This recipe is just what I was looking for---low fat and no eggs. Will try it soon. goetz3
You need to spray the pan. You won't get 48. They are yummy though. A bit chewy, but very soft and moist. I don't get the comparison to muffin tops, they taste like soft cookies to me. Great pumpkin flavor! I added pumpkin pie spice and some extra cinnamon, and a brown sugar cinnamon glaze on top:)
I doubled the recipe, and probably got half the amount of servings I should have...I made big spoonfuls I guess. But these are fantastic! Like pumpkin muffins! So yummy. I sprinkled a little pinch of sugar in the raw on top before baking for a little bit of a crunchy top on some of them. AWESOME
I made theses cookies with my day care kids, very easy. I used brown sugar and pumpkin spice seasoning. Also after reading the comments I sprayed the cookie sheets.
