Introduction

Ingredients

    2 tablespoons olive oil
    2 tablespoons all-purpose flour
    2 tablespoons chili powder
    1/2 teaspoon ground cumin
    1 (8-ounce) can tomato sauce
    2 cups water
    1 teaspoon salt
    1/4 teaspoon garlic powder


Directions

1. Heat oil in large 2-quart saucepan; stir in flour and chili powder; cook for 1 minute.
2. Add remaining ingredients and bring to a boil; simmer for about 10 minutes.

Makes 3 cups sauce. Enough for a recipe of ten enchiladas.

    Made this last night and used it in the Chicken Enchilada Casserole recipe submitted by Pollygidalgo. Great pairing! The sauce was perfect (will have to make two batches of it next time however there was not enough sauce for the enchilada's in my opinion). Took pics and blogged about it today. - 1/2/10

    fantastic! Didn't have tomato sauce, so I subbed tomato paste, worked perfect. I will use this recipe from now on- Thank you! Made it again - doubled the recipe and used ww flour. This time I did use Tom sauce and addl cumin! Thank you again for the great recipe! - 12/29/12
