Introduction

Ingredients

    32 ounces frozen hash browns
    1 pound cooked lean ham, cubed
    1 onion, diced
    1 green bell pepper, diced
    1 1/2 cup shredded cheese
    12 eggs
    1 cup skim milk
    1 teaspoon salt
    1 teaspoon black pepper

Directions

Spray crock pot well with cooking oil.

Divide potatoes, ham, veggies and cheese so you can create several layers of each in the crock pot.

Start with the hash browns, then ham, onions, peppers and then the cheese. Repeat until there are several layers.

Beat eggs, milk salt and pepper pour over layers in the crock pot. Cover and turn on LOW.

Cook for 10-12 hours overnight.

    I've never cooked eggs in a crock pot before... it works and was delicious! I served it at my Easter brunch and the crock pot was empty at the end!!! I'll definitely use this recipe again and again. - 4/18/09

    I'm going to try this the next time the teenager has a sleepover..with a few healthier substitutions. Chicken sausage or ground turkey instead of ham (lower salt and fat). Other seasonings to replace the salt (lower sodium). More egg whites than whole eggs (cholesterol is a little high for me). - 4/11/09

    Because I read that the hasbrowns tend to get mushy, I used southern hash browns instead. I halved the milk. I would agree that more spices are needed. It was a bit bland, but putting salsa on the finished product made it great. - 9/5/10

    I have a recipe that's very similar. I add 1/4 cup chopped onion, an additional 1/4 cup diced green pepper, 2 Tablespoons chopped green olives, 1/4 cup mushrooms, and garlic powder to taste to this. It improves flavor, while adding to the nutritional content. Reduce milk to 1/2 cup for dryer dish - 2/14/09

    It was so easy to make I traded the ham for Turkey Sausage and was just as good. It did get a little too done around the edges but tasted great. Add more spices if you think its too bland. - 10/1/08

    I needed to make 2 breakfast casseroles for a ladies brunch and only had room in the refrig for 1, so ... using the crockpot for this one saved the day. The dish was tasty, though I thought the ham made it a bit too salty. My hubby didn't think it was too salty when he was eating the few leftovers. - 9/25/08

    This was good, but quite salty. I would recommed low sodium ham. I used frozen tater tots instead of hashbrowns, and they worked fine. A bag of frozen broccoli would be a nice addition. - 1/19/12

    I tried this and thought it would be good based upon the reviews. It tasted bland and the crock pot eggs idea did not taste appetizing at all. I also had it on low for 10 hours and it still burned the sides & bottom. I will not be making this again! - 6/29/10

    I made this for a potluck and it was a HUGE hit! I used a spoon to remove excess grease/moisture at the end of cooking hoping to reduce the fat content a bit. The texture was mushy as others have said, but I think this has to do with the cheddar and hashbrowns. Maybe try Velveeta? - 4/26/10

    I just made this last night. Per recommendations, I halved the milk and it was a very good texture. I also added olives to the veggies and a little bit of garlic powder to the egg/spice mixture. Only complaint was a little bland, but I'll add more spices next time to flavor it up! Nice job! - 11/15/09

    This is a perfect company breakfast. When you want to spend time with them and not the kitchen! It can be made with any pre-cooked breakfast meats. I also added red pepper and a little more spice. Granulated garlic, black pepper, tobasco, fresh parsley and chives to top it off. Great time saver. - 12/3/08

    I used obrien potatoes with bell pepper and onion and used 1/2 egg whites and 1/2 whole eggs. I also used farmer john lean ham steak and used reduced fat shredded cheese increasing the amount to 2 cups. I also added onion and garlic powder for additional flavor and used some cayenne pepper heat - 1/2/12

    Mushy (even after reducing milk), bland (even with adding a bit extra salt), and the leftovers didnt reheat well. It tasted good immediately after cooking though. I will save this recipe only for breakfast emergencies, and only until I find a better breakfast casserole recipe. - 9/10/11
