Introduction
This is my knockoff of the Spinach Feta Wrap that you can get at Starbuck's...but healthier. Grilling the tortilla makes it seem a lot more "guilty" than it is. Ingredients

1/3 c. Eggbeaters
1 tbsp. Sun-dried tomatoes in olive oil
1/2 c. Spinach, fresh
1 oz. President Fat Free California Tomato and Basil Feta Cheese
1 Azteca Buena Vida Medium Whole Grain Tortilla
Cooking spray
Directions
1 serving
Use two skillets - one small and one medium. Coat the medium skillet with cooking spray and add eggs. Cook them through and make them into a small rectangle shape. When eggs are done cooking, remove them from skillet onto plate.
In the small skillet, add sun-dried tomatoes in oil and spinach and cook until spinach is wilted. Then add the feta and heat until it's somewhat melted.
Back in the medium skillet add some more cooking spray and then grill the tortilla lightly and add egg to middle of tortilla. Take the tortilla with egg out of skillet and add the tomato-spinach-feta mixture on top. Then wrap the tortilla like an envelope with side in first then fold over top and bottom. Return wrap to skillet and grill lightly on each side until warmed through.

I simplified this recipe a bit but it turned out very tasty. I mixed the chopped spinach with the egg whites and cooked in a small skillet omelet style. When done, placed in a small tortilla, sprinkled with the feta cheese and folded in half. Had fresh tomatoes on the side. Had no tomato in oil. - 9/23/09
